Ok, so more questions - obvious newbie… When I go to the online version of Grist and save a local document (from a template), it saves to a local file with a .grist extension. When I then try to import that file to the locally hosted version of Grist, I get the following error: “Unknown Upload”. I’m using the green Button labelled “import file” from my home screen? Is this not the way to import a template?
What am I missing?

what do you mean with a locally hosted version of Grist.
Do you mean the Grist Electron, which is like a .exe that you?
Or do you mean a Grist version that you run from your browser?
Because I got this problem with the Grist Electron app.
I have the same issue. I’ve downloaded from GitHub the DMG Desktop app. Installed and started up fine. However, I cannot import a .girst document I downloaded from my cloud account. I don’t know what I’m missing either.
In the electron app ( GitHub - gristlabs/grist-desktop: Desktop Grist, packaged with Electron )
you need to use File → Open to upload a grist document (this one is on linux, macos might put the bar at the top of the screen, who knows 
Edit: and it seems that you also need to do this in the app itself, it does not work from local lan website
