It would be nice if we could lock a column for editing, for things that are not often changed, mostly to prevent accidentally overwrites.

That would be useful! For now it’s possible with access rules. A quick option in a menu would still be more convenient.
Yes, access rules would currently work for this.
But I don’t imagine this function as a: “quick button to forbid structure changes”,
but rather as a convenient feature for any user.
Such accidental changes have happened to me a few times (mostly because I use browser extensions that bind keyboard shortcuts, but I disabled them on Grist because they clash with its keyboard shortcuts).
