Thanks for bringing this up. It’s not the first time running as non-root has come up, this Github issue from earlier this year has some discussion on this topic: Add a grist user in Dockerfile to avoid root user by rouja · Pull Request #789 · gristlabs/grist-core · GitHub.
However, it’s not ideal that running the docker image the way that’s recommended gives you a warning like this. We’re re-visiting this, and discussing some of the options available to sort this out.
