I know Forms is new, but can I build a lookup form to pull my data for editing?

If you mean using Forms to edit existing records, Forms don’t support this, at least not yet. But it sounds like something entirely possible and commonly done in Grist using Card views. I am not sure I understand your desired workflow though. If you could describe it in more detail, I may be able to suggest something.
